We believe in a long-term relationship between the earth and the people living here. C. Cassis is committed to working with responsible land stewards who grow in regenerative ways. This means that the whole process is better for the land, better for the fruit, and ultimately better for us to drink. Many of CC’s vendors are located within a few miles of their production space. 

Looking for ways to minimize any waste related to our production is core to our mission of being responsible environmental stewards.  From how we source, to creating secondary infusions and distillations, to giving pressed currants to our friends at Left Bank and Rose Hill to use in coferments, to composting organic materials with Ozone.  Lately, this has led us to more culinary explorations to learn how our pressed currants might be further utilized.

C. Cassis was founded in December 2020 by Rachael Petach, who is both the founder and producer. Made in small batches throughout the year, around 18,000 bottles of the flagship C. Cassis Aperitif are produced annually.
