Salt curing pressed currants is one method that has become our favorite way to create a unique savory condiment which we have been using for a ton of different things. Similar to the dry salt curing of olives practiced since Ancient Roman times.

Rachael’s design process was inspired by Fauvism, relational objects, joy and non-binary representation. The “C” started as a sharpie doodle on masking tape that Rachael would draw on mini CC bottles for friends in the early days. Enlisting the visual refinement of her graphic designer husband, Steve Quested (SET Creative), the two collaborated on color and shape, producing a final bottle design and logo that is beautiful and lasting.

Looking for ways to minimize any waste related to our production is core to our mission of being responsible environmental stewards. From how we source, to creating secondary infusions and distillations, to giving pressed currants to our friends at Left Bank and Rose Hill to use in coferments, to composting organic materials with Ozone. Lately, this has led us to more culinary explorations to learn how our pressed currants might be further utilized.
